Salmon and Egg Stuffed Avocado

Salmon and Egg Stuffed Avocado Recipe:

Ingredients:

  • 2 ripe avocados

  • 2 eggs

  • 1/2 cup cooked salmon (flaked)

  • 1 tablespoon olive oil

  • 1 tablespoon lemon juice

  • Salt and pepper to taste

  • Fresh herbs (such as chives or parsley) for garnish

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).

  2. Prepare the Avocados: Cut the avocados in half and remove the seeds. Scoop out a small portion of the flesh from each avocado half to create a larger well for the filling.

  3. Flake the Salmon: If you haven't done so already, cook and flake the salmon. We recommend using leftover cooked salmon or cook it specifically for this recipe to make this a quick and easy breakfast! Place it in the scooped out area of the avocado.

  4. Crack the Eggs: Crack one egg on top of the salmon into the avocado. Season the eggs with salt and pepper.

  5. Bake: Place the filled avocados in the preheated oven and bake for about 10-15 minutes or until the filling is heated through. Remove the stuffed avocados from the oven and garnish with fresh herbs, such as chopped chives or parsley.

This recipe combines the creamy texture of avocado with the rich flavors of salmon and eggs, creating a nutritious and satisfying dish. Adjust the seasonings to your taste preferences and feel free to customize with additional toppings or sauces if desired (we love Tzatziki!).
