Apple Cinnamon Ginger Pancakes

Serves 4 (Serving Size: 2 Pancakes)

Ingredients

2 tsp ginger

4 tsp cinnamon

1/4 tsp nutmeg

1 tsp vanilla extract

1/8 tsp salt

1/2 cup oats

1/2 cup Almond flour

1 cup applesauce

2 cups Almond Milk (or any milk of choice)

2 T apple cider vinegar

2 T coconut oil


Instructions

1. Mix all ingredients together in a food processor or mixer.

2. Peel and cut one apple. Sauté in pan with a pinch of cinnamon, nutmeg and coconut oil.

3. Cook batter on stove top for 1.5-2 minutes on each side.

3. Serve with sauteed apples and maple syrup.
